After that first ride was over (too soon!), Dodger's owner, Mrs. Barkley, told me that horses loved apples, and she gave me a crisp shiny apple and said I could feed it to Dodger. I took a bite, and then offered the apple to Dodger, who very gently took a small bite and chewed contentedly. I took another bite, then Dodger took one, then I took one more before letting Dodger finish it.
It was truly a magical moment
A lot of other magical moments from my childhood featured apples, too. Like the fall and winter holidays, when we'd go to Nana's house for holiday dinners; sitting at the "kid's table" for the family feast (which always featured some kind of apple dessert), the caramel apples, Nana's homemade apple sauce, and the mouth-watering smell of apples and cinnamon coming from the kitchen, where Nana baked the most amazing apple pies you've ever tasted...
Later, when I began riding lessons, I begged to give apples to my lesson horses. The stable owner said it was OK, and more magical moments happened when Daddy and I took our fall trips to the local orchard to gather bushels full of yummy treats for my four-legged friends.
Over the river and through the woods...
Of course, we always had to stop at Nana's on the way back to let her pick the best apples for her delicious pies and apple sauce, and she always made a fuss over me and told me what a big girl I was getting to be, and she always had a homemade treat for me (even if it was just an apple that she would peel for me with her old paring knife).
And whenever I gave an apple to one of "my" horses, I always shared them with them, bite for bite, just like I did that first time with old Dodger.
I guess it's not so surprising that apples got all tangled up in love — the love I felt for my Daddy, for my Nana, and for my horses.
Those were the days...
As the years went by, I learned to enjoy cooking, but I always regretted that I'd never asked Nana for any of her apples recipes before she passed; I let a treasure slip through my fingers. I can't tell you how many times I've wished that I could turn back the clock and go back to Nana's and ask her for her apple pie recipe, her apple crisp recipe, or her apple cake recipe.
But you can't turn back the clock, so I'm always on the lookout for apple recipes, and when I find one, I always try to tweak it just a little to see how close I can get to the way Nana used to make it (heck, I even try to tweak things that Nana never made to see how close I can get to how she might have made it).

So I decided to write my own.
